Hand picked and wild fermented as always. De-stemmed and macerated on skins overnight, pressed and aged outside in both barrel and stainless, subject to nature’s forces. Racked twice by gravity and cold stable thanks to Melbourne’s icy winter. Bottled in October 2019 with no additions apart from minimal sulphur. Unfiltered and unfined as always. A lovely example of the freshness possible from the high reaches of the Whitlands Plateau from the Croucher family vineyard. 70 dozen made. Pure + nervy.
