6x 2019 le timbre Riesling
Hand picked and wild fermented as always. De-stemmed and macerated on skins overnight, pressed and aged outside in both barrel and stainless, subject to nature’s forces. Racked twice by gravity and cold stable thanks to Melbourne’s icy winter. Bottled in October 2019 with no additions apart from minimal sulphur. Unfiltered and unfined as always. A lovely example of the freshness possible from the high reaches of the Whitlands Plateau from the Croucher family vineyard.

6x 2019 le timbre Friulano Cabernet
Hand Picked and wild fermented as always. Friulano from the Whitlands was de-stemmed and macerated on skins overnight, pressed and fermented in large format oak. Two weeks later it was topped with some Cabernet from Macedon that was pressed off before finishing ferment. Racked twice by gravity and bottled in November 2019 with no added sulphur. Unfiltered and unfined as always. A fun and crunchy blend of fruit grown in two of the highest elevation regions in Victoria.
